Mock Chaat

The first time I went to D.C. my wife took me to the restaurant Rasika for an early pre-dinner stop in at the bar, specifically to eat the famous Palaak Chaat. It was my first bite of anything in D.C. and it blew my socks off. So simple but all culminating in flavors I had never tasted. Frying battered baby spinach leaves is a delicate and messy process at home. So I mocked it by making little besan crunchies to top. When you get to Rasika yourself one day, enjoy. Until then, this may suffice.
