Curry Croquettes w Tomato Gravy

Reading through my cookbooks on American Southern cuisine I would come across Tomato Gravy used for breakfast dishes, smothered over biscuits, eggs or grits. This got me thinking about various Indian curries based on thick, savory tomato gravy-like sauces, eventually landing on a curry potato croquette as the perfect pairing. The thick, dryer gravy can smother the croquettes without sogging them up, keeping the crunch through the last bite. Make the croquettes ahead as they benefit from some time in the fridge before frying. Make the tomato gravy to serve.

    Croquettes

    • Russet or Yukon Gold Potatoes (or 50/50, Yukon more dense)

    • Curry Powder

    • Yogurt, Greek or vegan, plain and unsweetened

    • All-Purpose Flour

    • Kosher Salt

    Tomato Gravy

    • EVOO

    • Onion

    • Flour

    • Canned Whole Tomatoes

    • Tomato Paste

    • Soy Sauce

    • Sriracha

    • Kosher Salt to taste
