Smoked Potato Tacos

Don't let the process of smoking vegetables scare you. A basic electric, analog box smoker is about $100-ish and so easy and mess free to use. You can smoke pretty much anything (in a smoker). Adobo, a Mexican-Philipino restaurant in Denver, has delicious smoked Potato Tacos. When I set of experimenting I loaded some tomatoes into the smoker, along with the potatoes. That led to the smoked tomato chili sauce (recipe link) that tops my version of this smokey taco. Some diced onion and cilantro, a round of griddled cheese or maybe some charred summer corn kernels is about all you need to garnish and enjoy this great bite. Make enough for your friends as these are easy to assemble and share.
